Lincoln Street, Columbus, Ohio 43215 Position Summary Metsi’s is seeking an experienced, organized, and hospitality-driven Assistant General Manager to help lead daily restaurant operations and oversee our beverage program. This position combines hands-on floor management with responsibility for wine, liquor, and beer purchasing, inventory, menu maintenance, cost control, and sales growth. The ideal candidate is a confident restaurant leader with strong beverage knowledge, sound financial judgment, excellent organizational skills, and a collaborative management style. This person will work closely with ownership, the General Manager, bartenders, servers, and the culinary team to deliver an exceptional guest experience while meeting the restaurant’s operational and financial goals. Primary ResponsibilitiesRestaurant and Floor Management • Serve as the scheduled manager on duty and oversee all aspects of restaurant service during assigned shifts., • Lead pre-shift meetings and ensure the team is prepared with current menu, beverage, reservation, and service information., • Support, coach, and hold employees accountable to Metsi’s service and workplace standards., • Address guest concerns promptly, professionally, and with sound judgment., • Coordinate with the kitchen and front-of-house teams to maintain smooth, efficient service., • Assist with opening and closing procedures, cash handling, reporting, and other daily management responsibilities., • Help train and develop servers, bartenders, and support staff., • Maintain a safe, professional, inclusive, and respectful environment for all employees and guests., • Assist restaurant leadership with scheduling, staffing, policy enforcement, and other operational needs. Beverage Program Management • Manage the restaurant’s wine, liquor, and beer programs., • Conduct complete and accurate beverage inventories on the required schedule., • Order all wine, liquor, and beer products while maintaining appropriate inventory levels., • Keep beverage menus, pricing, recipes, and the point-of-sale system accurate and current., • Maintain clean, secure, and well-organized wine and beverage storage areas., • Manage an accurate decline, waste, breakage, transfer, and out-of-stock tracking process., • Build productive relationships with distributors, suppliers, and beverage representatives., • Monitor product availability and identify appropriate substitutions when necessary., • Collaborate with the bar team to develop, document, and maintain standardized cocktail recipes., • Support beverage education through tastings, pre-shift training, and ongoing staff development., • Help create beverage features, pairings, events, and other opportunities to increase guest engagement and sales. Cost Control and Financial Performance • Actively manage beverage cost of goods sold, with target costs of approximately 27% for wine, 16% for liquor, and 22% for beer., • Review beverage purchases, inventory results, sales, waste, and product mix to identify cost variances., • Work with ownership to review monthly beverage performance and relevant profit-and-loss results., • Cost every cocktail and maintain accurate costing records as ingredients, recipes, or purchase prices change., • Develop cocktails with a target theoretical cost of approximately 14–15% to support an actual liquor cost near 16%., • Regularly review wines offered by the glass and adjust products, pricing, or pour strategy to meet cost targets., • Make informed purchasing and pricing recommendations based on profitability, quality, and guest demand., • Grow beverage sales through thoughtful menu development, staff education, suggestive selling, and programming., • Protect margins while maintaining the quality and value expected by Metsi’s guests. Qualifications • Previous restaurant management or assistant general manager experience in a full-service restaurant., • Strong working knowledge of wine, spirits, beer, cocktails, and beverage service., • Experience with beverage purchasing, inventory, recipe costing, menu pricing, and COGS management., • Proven ability to lead a team and manage a busy restaurant floor., • Strong organizational skills and close attention to detail., • Comfortable reviewing sales reports, invoices, inventories, and financial performance., • Clear, respectful, and professional communication skills., • Ability to coach employees, resolve conflict, and make sound decisions under pressure., • Availability to work evenings, weekends, holidays, and other shifts required by restaurant operations., • Sommelier certification or other recognized beverage education is preferred but not required.
