The Role As Sous Chef, you will be the second-in-command within the kitchen, working closely with the Head Chef to deliver consistently outstanding food while leading, developing and motivating the kitchen team. This is a hands-on leadership role where you will help maintain the highest standards of food quality, cleanliness, organisation and food safety. You'll lead by example, support junior chefs in their development and ensure the kitchen operates efficiently during every service. When the Head Chef is away, you will confidently take responsibility for the entire kitchen operation. Key Responsibilities Kitchen Operations Support the Head Chef in the day-to-day running of the kitchen. Deliver consistently high-quality dishes to company specification. Ensure all food is prepared, cooked and presented to an exceptional standard. Maintain excellent service during busy periods. Support menu development and seasonal specials. Ensure recipes and portion controls are followed accurately. Leadership Lead and motivate the kitchen team. Coach and develop junior chefs. Assist with recruitment, induction and training. Create a positive, respectful and professional kitchen culture. Communicate effectively with Front of House to ensure smooth service. Food Safety & Compliance Maintain the highest food hygiene standards at all times. Ensure full compliance with Food Safety legislation and HACCP procedures. Complete all required Trail food safety and operational checks accurately and on time. Ensure temperature records, cleaning schedules and due diligence paperwork are completed. Maintain a clean, organised and safe kitchen environment throughout every shift. Stock & Cost Control Assist with stock ordering and stock takes. Minimise waste through careful preparation and stock rotation. Ensure correct storage and labelling of all food products. Support GP targets by maintaining portion control and reducing waste. Report equipment faults promptly. Team Standards Lead by example in punctuality, professionalism and appearance. Ensure company uniform standards are maintained. Promote a culture of teamwork and accountability. Encourage continuous improvement within the kitchen. What We're Looking For We're looking for someone who: Has previous experience as a Sous Chef or Senior Chef de Partie. Has excellent organisational and leadership skills. Thrives under pressure and enjoys busy services. Has a genuine passion for fresh food and hospitality. Takes pride in developing others. Is calm, positive and solutions-focused. Holds a Level 2 Food Safety qualification (Level 3 desirable). Understands kitchen financial performance, GP and labour control. Shares our values of teamwork, respect and continuous improvement. Success in This Role A successful Sous Chef will: Deliver consistently excellent food quality. Support the Head Chef in achieving food GP targets. Ensure all food safety documentation and Trail checks are completed accurately. Maintain excellent cleanliness standards. Help create a positive, motivated kitchen team. Support the training and progression of junior chefs. Receive consistently positive guest feedback.
