You'll handle dough production from scratch — mixing and portioning to our recipes and specs — keeping quality and consistency spot-on every single batch. You'll work independently through the night, so we need someone self-sufficient, organised, very reliable and quality-driven, with strong attention to detail. Responsibilities include prepping doughs and batch quantities to the production plan, correct chilling and storage, keeping the kitchen clean-as-you-go, completing temperature and hygiene records, and leaving everything ready for a smooth morning handover. Previous professional baking experience is essential (enriched doughs or viennoiserie a big plus). Level 2 Food Safety preferred, or willingness to complete it shortly after starting.
